We can’t stress enough how important it is to try your best and eat with the seasons! Better food, for starters: rich with nutrients when grown in their proper season, but also better for the soil when we practice crop rotation! Check out 6 seasonal veggies and fruits to include in your meals this month.
1. Asparagus
Asparagus has a short season of 6-8 weeks, so grab them now while they’re at their best! Rich in vitamins A, C, E, K, and folate (vitamin B9).
2. Strawberries
Strawberries need no convincing! Indulge in nature’s candy this month: high in vitamin C, folate, and potassium.
3. Chard
Chard is SO slept-on. A delicious, nutrient-dense leafy-green rich in vitamins K, A, and C, as well as iron, magnesium, and potassium.
4. Melons
Sweet and juicy – the perfect spring snack. Rich in vitamins A and C, as well as potassium.
5. Red cabbage
We love red cabbage around here. Great in stir-fries, raw as a topping for bowls or tacos, steamed with a little broth… they’re totally versatile! Red cabbage is packed with vitamins A, C, and K, along with folate and potassium.
6. Cauliflower
Another secretly versatile veggie. Roasted, steamed, puréed, dipped, breaded, sauced… the list is endless. Full of vitamins C, K, and B6, as well as folate.
