Fall is approaching quickly (sobbing… not because I don’t like fall, I do, but I’m SO not ready for summer to be over) and with the change of the seasons, I’ve grown inspired to whip up a new recipe that reminds me of the Gilmore Girls credits intro. Iykyk.
This one is easy, people. Homemade granola. You could do this in your sleep (although I don’t recommend that course of action). Here’s my beef with store-bought granola:
- It always has more sugar than you realize.
- It often comes packaged in plastic.
- It’s expensive. Especially if you opt for the “healthier” options.
In this economy, we don’t have the luxury of buying sugar-pumped granola wrapped in fossil-fuel derivative packaging and marked up with 75% profit margins!

So let’s just make it ourselves. Here’s what you’ll need:
Recipe:
Ingredients:
- 2 cups rolled oats
- 1 cup mixed nuts
- ¾ cup dried fruit
- 1 tablespoon honey
- 3 tablespoons olive oil (or drizzle to taste, as I do)
- 1 tablespoon cinnamon (again, I sprinkle to taste)
- 2 teaspoons of salt (or to taste)
- OPTIONAL:
- Chopped dark chocolate, to taste
- Coconut flakes, to taste
Instructions:
- Preheat the oven to 350°F (180°C).
- In a large baking pan (or Pyrex baking dish, as I used), pour out all the oats.
- Chop the mixed nuts and sprinkle them in with the oats.
- Drizzle oil all and honey all over, then sprinkle the cinnamon and salt in the oat mixture.
- Mix well with a spoon and put in the oven for 15 minutes.
- Remove the oat mixture from the oven, and add dried fruit (add coconut flakes at this step if you wish). Mix well and put back in the oven for 10 minutes.
- It is VERY important to watch the granola at this step, as the dried fruit can burn easily. Don’t leave it in the oven for more than 10 minutes.
- Take the granola out of the oven and let cool completely. Once cooled, you can add dark chocolate if desired.
- Store in an air-tight container.
This granola smells like autumn, so get ready for your house to be scrumptiously perfumed.
This granola is fabulous as a cereal with a splash of your favorite milk, but also goes great with yogurt for a hardier snack. Could even put it on top of ice cream if you wanted to get really freaky.
